How to point the Mac 'app' at a different sage source tree

What are the steps to point an installed /Applications/Sage.app to a different source tree. Currently I guess it points at /Applications/Sage.app/Contents/Resources/sage, Ivan's answer to another question seems to suggest that it can be redirected easily but did not give any details.

While the app is running, choose "Preferences..." from the "Sage" menu. Click the box marked "Use alternate Sage executable", and then fill in the blank with the path pointing to the file "sage" at the top level of the source tree you want to use.
