I'm using SageMath 8.0 on Windows native. I try to write the upper case Greek Letter Chi on a markdown cell on a Jupyter Notebook but it is not recognized as such. By the way, lower case \chi is OK.

That's not a latex control sequence. Use "X" instead (both symbols have the same typography).
