I've download and installed the SageMath-7.6 app for Mac and have it running. However, I'm not sure how to set the Jupyter notebook as the default notebook. Also, will this cause issues with my running Jupyter from Anaconda?

First question; wait for Sage 8.0. Ivan Andrus put in a goodly amount of work making sure that would work nicely in the app bundle.

Second question I don't know, but based on many questions on this site (as you are no doubt aware) you may have to be careful about some environment variables.

Or you can try it now in the mid-to-late betas ;-)
